I am in a relationship! And I don’t mean my boyfriend, nor the relationship I have with running, for example. I mean something full of constant satisfaction, harmony and good taste! I just realized that I have been in a 8-9-year relationship with my breakfast. Now, I know this sounds…weird. Still, my breakfast has consisted in pretty much 90% of the cases of banana muesli with yogurt (dairy or soy) and some sorts of seeds/nuts/fancy stuff. And it has always tasted great! So, here it is! The version of my breakfast which I have been eating for the past months…
Super light, perfect for the summer, full of plant protein!
Since I have reduced my dairy consumption to a minimum, which means that I am eating 98% vegan, I substituted dairy yogurt with soy yogurt and soy quark. Hence, the high protein content. Luckily, in Austria, there is soy yogurt on the market made out of local soy beans, which tastes grate and is GMO-free.
Bananas have one of the best tastes I know, but they also are a good source of magnesium (yeey, runners!), Vitamin C, Vitamin B6, readily available carbohydrates and fiber. So, they can have a positive effect on your muscles (no cramps), immune system, metabolism, nervous and digestive system!
And here comes the best part about bananas: they taste best when they are really really ripe (when they have dark spots on their skin) AND which bananas are always on discount in the supermarket… the ones with the black spots! 🙂
- One ripe banana
- 3 tbsp soy quark
- 5 tbsp soy yogurt
- 2 tbsp muesli
- 2 tsp chia seeds
- 2 tsp hemp seeds
- 2 tsp date sugar (dried dates powder)
- cacao powder
- Smash the banana with a fork (in a bowl :))
- Add the quark and the yogurt and mix well until there are no bumps
- Add the rest of the ingredients but the cacao powder. Mix well
- Sprinkle the cacao powder on top and let it rest in the fridge.
