I have a full-time job… and I also have one or two hobbies that I am really passionate about. So even though my favorite type of shopping is food shopping, I don’t always have the time to go to the store and buy whatever it is I am craving for. One also has to mention here that I live in Austria that is not famous for its flexible supermarket opening hours… Mon – Fri: till 19:30 or 20:00, Sat: till 18:00, Sundays: closed … and this is after they introduced the “longer opening hours”.
So on a Sunday like this, after a rather busy working week and after a Saturday when I chose to attend my boyfriend’s birthday celebration rather than to go to the store, I found myself not having the most in “superfoods” in my kitchen, so I had to improvise with a rather simple, non-special and… umm emergency breakfast.
And here is the result: a warm, energizing bowl of apple porridge spiced up with cinnamon and nuts! What I love about this one is how easy, quick and regional it is!… obviously, I like that fact that it is supper yummy, too! The ingredients: you always have them at home!.. or at least if you are a vegetarian/vegan… 🙂
Just to list some of the additional benefits of this breakfast: apples are full of fiber and are a good source of Vitamin C. Fine oats, a.k.a porridge, are an excellent source of complex carbohydrates that keep you full for quite some time while they have extremely low levels of sugar (ca. 1 gr/100 gr). On top, oats (as they are grains) are high in vitamins and minerals such as Vitamin B1, Magnesium, Iron, Copper, Manganese, Phosphorus. Wondering where vegetarians and vegans get their protein from? Well, grains are an excellent source of plant protein. So are oats. Cinnamon, apart from having an enchanting aroma, is high in antioxidants, has anti-inflammatory properties and regulates blood sugar level.
We were lucky enough to get as a present around 2 kilos of fresh and juicy apples from Steiermark (or Styria, one of Austria’s states, famous for its ridiculously good apples… and I must say, it’s true!).
- ⅔ bowl of porridge (I take the one with nuts and dried fruits)
- 150 - 200 ml oat milk
- ½ apple
- 20 gr raisins
- 20 gr walnuts
- Cut the apple in small pieces
- In a bowl, mix it with the porridge and the raisins
- Warm up the milk and pour it over
- Let it soak for some minutes. Having the apples soak in the warm milk is a good solution for people who have difficulties digesting raw apples. Heating them makes apples easier on the stomach. Sprinkle some walnuts and cinnamon on top!
