When I was a child, winter was my favorite season. It was mostly because of the tons of snow we used to get already in late November. Now, if somebody asks me (strangely enough people stop asking you what your favorite season is after the age of 12…), I would still say “Winter!” without even thinking about it… We get much less snow and I mostly spend my time in the city, but there is something special about winter, which makes it so charming. It is the atmosphere, the holiday feeling, the considerable amounts of wine being drunk, this feeling of “New Year – New Beginning”, the presents… ahh the presents! This year I decided to make my presents really personal… no more shopping, no more stress, because one has to show love by showing up with the best present possible. To get to the point: this year my presents will be these super yummy Gingerbread Energy Bites!

What I love the most about these bites is the heart-warming gingerbread taste! Exactly what one needs in the cold winter months!

Did I mention that these are again super easy? Super yummy? … and you can eat them without having bad conscious… no refined sugar and only natural ingredients.

Ani's Bite of Joy:
Ingredients
  • 150gr dried pitted dates
  • 80gr ground walnuts
  • 80gr porridge (I use the one that has dried fruits inside)
  • 30gr coconut flakes
  • 10gr gingerbread spice mix
  • 40ml agave syrup
  • 90-100ml warm water
What do you need to do?
  1. Cut the dates in pieces and let them soak for 10-15 min in the warm water until they get soft. Blend
  2. Mix all of the ingredients
  3. Form the bites
