Super Smart Energy Bites

Super Smart Energy Bites

Inspired by Felix’s exam, which he is having in 2 days, I decided to take an active role into his preparation and take his performance to the next level! Everybody who’s ever had an exam knows that studying alone doesn’t make it… you need little tricks to show your best! So, here is what I came up with: something small & easy to take on the Go (did I say that he has to travel 2.5 h to get to his exam?), something that’s good for the brain and keeps you energized, something so damn yummy!!! and of course fun to make!

Ani's Bite of Joy:
Ingredients
  • 100 g raisins
  • 50 g dried dates (they should still be juicy)
  • 100 ml red orange juice (freshly squeezed or at least not from concentrate 🙂 )
  • 70 g grated walnuts
  • 50 g grated almonds
  • 60 g fine oat flakes (I used porridge in this case)
  • 30 g raw cacao powder
  • ¼ avocado
  • hemp seeds
  • fine coconut flakes
What do you need to do?
  1. Cut the dried dates in small pieces and mix them together with the raisins and the juice. Let them soak overnight. One can use any type of liquid here. I normally would have added some rum or cherry liqueur, but given the occasion, that would have been counterproductive... The red orange juice gives a very fresh note!
  2. If you are in a hurry, you can also soak the dried fruits in warm/hot water for some time until they get softer.
  3. On the next day, add the ¼ avocado and blend. The result: a homogeneous mixture, which you would want to eat right away... Well, don't! You can lick the bowl after we are done
  4. Add all other ingredients and mix well (with your hands) until a dough is formed
  5. Form small bites and roll them in the hemp seeds or the coconut.
  6. Once you have all bites formed and coated, put them in the fridge. That makes them slightly harder and they will for sure last longer.
Notes
Now you can lick your fingers and that bowl!
